I don't need my documents on my Mac to sync with my iPhone and need to delete them on the phone
How to permanently delete the contents of the file app on my iPhone 11 and stop my Mac syncing the documents

On the phone turn off whatever they are sync'd to.
Probably iCloud Drive or could be OneDrive, Google Drive etc.
