Series 3 Apple Watch.
I’ve read that the series 3 Apple Watch will not be able to be supported by future IOS updates. Is this accurate and what series will be compatible?

Yes, Apple Watch Series 3 won’t support future watchOS updates, and they will be supported only by Apple Watch Series 4, 5, 6, 7 and SE, as you can see at the end of the page on the link below.
And, of sure, also future models of Apple Watch will be compatible with future versions of WatchOS.
