How can I restore deleted call history?

That "recent" backup would have had to occur before the call history was deleted.....and......no other backups must have occurred since that time.

If a day has gone by, the new backup......without the prior call history......has very likely already replaced the previous backup.

You cannot.

You can do it only if you have a recent iCloud backup.. restore your iPhone with your last backup and you will have your call history back
