I subscribe to iCloud storage but want to subscribe to Apple One which includes iCloud storage. My concern is will I lose the data currently stored on my current iCloud storage if I change subscriptions?

Your data remains where it is, but your plan - the billing - moves from an iCloud+ subscription to an Apple One subscription.
