If I have multiple Gmail accounts linked to my iPhone which have some duplicate contacts. If I delete one of the Gmail accounts will it still delete all of the contacts from that account if I have the same contact in another account?

Open the Contacts App, and tap on Groups at the top left corner. Then tap on each account to de-select the accounts you don’t want to see.
If the contacts you want to keep are still visible after doing that, then removing the account will not cause any issue with the contacts.
If the contacts stop being available, then they are not duplicated and only exist in that account.
