How does an organizer stop being an organizer

On your son’s iPhone, open Settings ➔ Apple ID (Your Name at Top) ➔ Family Sharing ➔ Tap on your name ➔ Stop Using Family Sharing. This should end Family Sharing for the current family. You can then use your iPhone and start setting up Family Sharing.
