The way it used to work was, at the back of the Apple Store there was a table with an assortment of cables and adapters for you to use. A very helpful Representative was hovering nearby, to get you started at doing it yourself and answering questions that popped up along the way.

Users at the table were migrating their own -- some iPhone-to-iPhone, some Mac-to-Mac. Some just needed to use a cable they did not want to own, some needed a LOT of assistance.
