My watch 6 chimes regularly during overnight charging, sometimes only a few minutes after putting on charge. Tried various different power supplies and charging devices (Apple & 3rd party). I have to take the watch off charge to stop the chimes. How can this be resolved?

If we understand your post correctly, it sounds like your Apple Watch is chiming when it's being charged. We'd like to help with that.
The chiming noise you're hearing can happen if the Apple Watch is not securely on the charger. If you use a case on the Apple Watch, try removing the case.

Force restart your Apple Watch
You should force restart your Apple Watch as a last resort and only if it's not responding.
Don’t force restart your Apple Watch if you're updating watchOS. After you see the Apple logo and progress wheel, leave your watch alone and on its charger until the update finishes.
To force restart your Apple Watch, press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
If you've done that and other type of chargers still don't work with the Apple Watch, contact Apple Support for further help.

The watch sits directly on the charger - My wife and I both have a three in one wireless chargers and the original Apple chargers. The problem is the same with all four chargers and different USB supplies.
My wife’s watch 5 doesn’t have the same problem.

Apparently - if you do a bit of research in the internet - apple seems to have caused again a problem with the latest Update to WatchOS 8.5.1. Affected are mostly Watch Models 7 and also some Models 6 (as mine). Resetting, restarting etc. doesn't fix the problem.
