Hey there i changed pretty much every folder icon on my mac just the "Documents" folder doesn't change no matter what i try. I even tried to restart and copy the Icon the "official" way: "One way to do this is to open the picture in Preview, choose Edit > Select All, then choose Edit > Copy". Sadly nothing works, does someone have an idea what i could try?

What specifically version of macOS do you have installed? Also, testing in another user account can help determine if this may be user or account related settings causing this issue. Here's how you can create a new user for testing:
