I signed up for Apple Music in order to transfer the music I had in iTunes; I don’t want to purchase new music. I’ve made the transfer, and I can access my music from my iPhone now, but I don’t know if it’s being stored on my phone or in the cloud somewhere.

What do I have to do in order to be able to just own the music I already own, and not pay a monthly price?

If you have music on your Mac that you want to put on your iPhone, you don't need an Apple Music subscription. See:
