Does anyone know how to remove your child who is 24 not 10 years old from the family sharing?

If the age in their Apple ID shows that they are 10 years old you need to fix that first. See→Update the birth date associated with your Apple ID - Apple Support (CA); you cannot remove someone under 13 from Family Sharing, you can only transfer them to another family group.

Once that is done, if it is needed, see→Leave Family Sharing - Apple Support
