What happens to each persons music ?

They retain whatever is on their device. However, if you are using a shared Apple Music subscription then strictly speaking the other users who do not have their own subscription will have their accounts formally cancelled when the family is disbanded. They then run the risk of having their account information deleted, along with playlists, etc. To avoid this, each person needs to take out an individual subscription before the family is disbanded so they have continual coverage during the transition.

For more about the actual process of changing organizer:

You have to disband the current family and set up a new Family group with you as the organizer.

"If there are children under 13 years old, the new organizer needs to leave the existing family, set up the new family, and then the under 13 years old children can be transferred to the new family. Then disband the old family and join the new family."
