I cannot find my iPhone XS backup in my iCloud. I want to be sure the phone IS backed up so I can transfer everything on phone to a new iPhone.
Logging on to iCloud I only see info from my Mac - but supposedly my watch & iPad as well as the phone are being backed up to the cloud. I can't find any backup for these devices, although they are listed as devices under the settings.
How can I be assured everything on phone gets to new phone?

Correct. Backups cannot be seen in the iCloud.com website. to verify the backup exists, setup the new iPhone and select iCloud backup when promoted. It will then show any available iCloud backups.
You can also verify directly in the iPhone XS under Settings->Account->iCloud->Manage Storage->Backups->(This iPhone) it will show the size and date when it was made.

Thanks for that info. Helpful. What I noticed is that it says my Photos are backed up separately. When I change phones, will it automatically find the photos & back them up too? I don't want to lose all the photos on my phone.

If you are using iCloud Photos, yes, they sync separately to the backup.
when you setup the new iPhone and log in to your iCloud account and turn on iCloud Photos, it will sync the photos down to the iPhone.
