I was gifted an apple watch, it is still in the original packaging unopened. I was wondering if I was able to exchange it for a different color? I am not sure where it was purchased, its the Series 6 40MM Space Gray and I was hoping for a rose gold color.

Not unless you have the receipt and it's been less than 14 days since it was originally purchased, assuming it was purchased directly from Apple.

True, but Apple stopped selling Apple Watch 6, the day Apple Watch 7 launched, and at that time it's highly unlikely the holiday return schedule had been implemented on October 15th the actual launch date. Again, this only matters if the gifted Apple Watch was purchased from Apple Directly.
Actually Christmas exchange rules are in effect, so the deadline is January 8th
