Suddenly I cannot view all file locations in Finder - only the RECENTS folder shows up

I just installed Epson WF 3620 software via Epson's site on MacBook Pro M1 2021. It put Epson software on plus ink monitor, fax feature and so one. Now there is no back button, no down arrow, nothing in Finder to open any other portion of the folder options I have in Finder Preferences - all of the Folders (locations) I wanted shown in Finder are still checked in Finder Preferences but they do not display.

I saw another question on here about this and tried Force quitting Finder but it refused to Force Quit and Relaunch (via being in Finder, holding down SHIFT key and pressing clicking the Apple then selecting Finder from the list of open apps and asking it to force quit and relaunch. I continued to ask for a Relaunch multiple times as it just sat frozen in the Force Quit interface but nothing happened.

Can anyone advise the best way to resolve this. It only happened since I put the printer software on this MacBook, Finder's file/location-type options were all there and working perfectly just yesterday.

P.S. I actually only found this right away because I wanted to see all the different applications (printer, fax, ink, other options that were included) the Epson software installed last night when I used that installer. Thinking I could simply look in the Applications folder but when I opened Finder, it was a totally different experience with only that Finder weird looking list showing up. with no way to navigate back to the whole Finder.
