Have any screenshots of these? If so, you can scan save them one screenshot after the other on to a document. Then, print it, scanning it in with software called OmniPage.

Try Using Software called OmniPage.

OnniPage is scan-to-PDF software, and would be worth it, if these are not hundreds of pages. All you would need to do is print out this document of screenshots, and then scan it with OnmiPage --- all would be saved as a PDF document or other options, and could fully editable as a MS Word Document.  Here is the Developer's Site: Kofax OmniPage Standard and Ultimate | Kofax

I'm curious how do you want to make screenshot or scan of ‘old text messages’ without the old iPhone?

I can do that via my Mac usng a 3rd party app -> iMazing -> Old backups.

If the OP has no screenshots, then my reply would not apply. If the OP does have screenshots, then they'd add them one after the other. It is a scenario.
