how do I temporarily change the permission on a system file (/library/systemextension/com.mcafee...) so I can delete it? The SIP prevents it.

Disable SIP
You need to boot into Recovery Mode, disable SIP by running "csrutil disable" in the Terminal. Restart then delete the file. Then you should re-enable SIP by typing "csrutil clear” in the Terminal.
