My mother gave me her Apple Watch but I’m having a hard time pairing the watch to my phone. Can I erase her if etc and log myself on and pair it to my phone?

Your mother should follow the steps in the 'Before you sell, give away, or trade in your Apple Watch' section of:

What to do before you sell, give away, or trade in your Apple Watch, or buy one from someone else - Apple Support

Then you can setup the watch with your iPhone according to:
