My credit card is on someone else’s phone for Apple Music how can I take this off without having their phone?

Hello ~ You can’t. You may have to contact your credit card company and cancel your card. Have a new card issued and use that or another card to make purchases on your device. Let me ask this is that same card on your device as well or connected with your Apple ID …if so you may be able to remove it. Also take a look here:
