Upgrade my OS

I have an iMac (21.5-inch, Late 2012). Can I upgrade the OS to Big Sur or the latest OS?

No, your computer is simply too old. You would need a 2014 or later to run Big Sur. If you have a need for Big Sur then it is time to upgrade the computer to a newer Mac. Sorry there are no work arounds.
