Maybe others will have a better idea but I think you may need to reset the new phone and then start the process again.


How to erase your iPhone, iPad, or iPod touch - Apple Support

Tap Settings > General > Reset (scroll all the way to the bottom)


Click on this link --> https://support.apple.com/HT201269 to learn how to "Transfer data from your previous iOS device to your new iPhone, iPad, or iPod touch". Select one of the three options: Quickstart, iCloud, or iTunes/Finder. You may find better results with a different option if Quickstart continues to be slow.
