My MacBook Pro does kernel panic while I put the device in sleep (exactly, after 6-8 hours after closing the lid). I realised that, when I plug the device into the charger, the problem disappears.
What can I do? I should try to reinstall the OS?

I do see < Mac OS version: 20F71 > macOS Big Sur 11.4 There is a macOS 11.5.1 update available to you.
Typically sleep/wake issue you can try on an Intel Mac—

I would try updating your "Paragon" third party software and see if the issue resolves, or uninstall it as a test.

Kernel Panics are predominately caused by hardware faults or faulty third-party kernel extensions.
Learn what to do if your computer restarts or shuts down unexpectedly, or you get a message that your computer restarted or shut down because of a problem.
