I bought an Apple TV 4k today to take with me while we travel. We don't own a TV at home but plan to use it at the hotels.
How can I get it set up so I am not downloading all of the apps over the hotel's wifi which is painfully slow.

Simple answer... you can’t. You MUST have a display to be able to see the menus and download apps.

Wish there were a way to get its MAC address so I can let the concierge at the front desk allow it on their network.
Wish there were a way to load Plex, YouTube, log into my iCloud account etc. ahead of time.
Has anyone tried to use an HDMI to usb-c cable to connect to iMac? Not even sure that is what I would need I only have thunderbolt and USB ports on my 2019 iMac.

The issue is moot. E.g. Netflix app is 94 MB. At top streaming quality 25 Mbps (3.125 MB/s), that download is equivalent to 30 seconds of streaming content.
If the hotel Wi-Fi is painfully slow, then it is not suitable for streaming video.
Also major hotel chains will not allow streaming Apple TV or any other streaming devices as it violates their security. For that reason when I travel are you smaller change or Airbnb or VRBO
