These are old drives...

FW800 (9-pin to 9-pin)

FW800 to FW400 (9-pin to 6-pin)

Apple Thunderbolt to FireWire Adapter - Apple

Some drives also have the alternate option for USB out—

In this case it is a simple matter of USBC to USB adapter

USB-C to USB Adapter - Apple

if it's SATA; as long as the drive is in a format that macOS can read you could either buy a conversion kit, or just find a SATA to USB enclosure. that's pretty straightforward. you drop the drive in the case, connect it and run the USB cable to the Mac.

If it's an older connection like PATA you need a conversion kit like

https://www.cdw.com/product/tripp-lite-usb-3.0-superspeed-to-sata-ide-adapter-2.5-3.5-5.25-hard-drives/4426777?pfm=srh

if the drive is in a format the Mac can't read or you already have the drive on a working computer the easiest fix would be just share as a network drive, then format no longer matters if you can see the drive from another computer. the transfer is going to be a fast/slow as your network and your drive but it will work without having to buy anything if you just want the data off it.

Keep in mind external drives, rotational mechanical drives transfer rates are going to be slower than advertised.
