My PC has a large iTunes library. It takes 10 minutes for my iPad to load the library with Home Sharing. Can Home Sharing just display the albums quickly, as does Apple Remote, and then only stream the selected album or song?

No, what you see is what you get. Use Feedback - iTunes - Apple to suggest that Apple improve this feature.
