The documentation says turning on automatic updates means you only need to download to one device and then the download is distributed to your other devices using the same Apple ID. What if you don't have more than a single iPhone (for example). It does NOT mean the iPhone check the App Store and automatically downloads any updates. Is this correct?

Automatic App Downloads will happen if you have more than one device and you download or buy an App on a different device.

No. What you are referring to applies to newly purchased apps, not app updates. If you have Automatic Downloads > Apps enabled on two of your devices, then newly purchased app on one of them will be automatically downloaded on the other device too.
I was looking at the fine print under App Updates here https://support.apple.com/en-us/HT202180. It says "Automatically download new purchases (including free) made on other devices" but appears under App Updates, not Apps, so I wasn't sure.
