can i pair more than one device to my apple watch

I currently have my AirPods and my Sony Noise Canceling headphones paired to my Apple Watch. I have to select which ones I'm going to listen on, but the Apple Watch does not need me to put the headphones back into "Discover" mode to use them.

And of course I'm paired to my iPhone via Bluetooth as well.

If you mean bluetooth devices then yes you can.
