How do I stop safari/bing from saving my search history

Use Private Browsing. https://support.apple.com/guide/safari/use-private-browsing-ibrw1069/mac
If a user didn't use Private Browsing,

click Safari in the Safari menu bar, hold the "option" key down and click "Clear History".
