Apple Watch 3

I’ve sold my Apple Watch 3, I deleted all the information and deleted it from my Apple account. The new owner has contacted me saying it asks for my ID and password when she tries to set it up. Can anyone help me please

You should have followed the procedure in the 'Before you sell, give away, or trade in your Apple Watch' section of:

What to do before you sell, give away, or trade in your Apple Watch, or buy one from someone else - Apple Support

At this point all I can suggest is that you get the watch back, pair it with your iPhone, and then follow the above procedure.
