I'm trying to basically rename my @iCloud.com email without losing my documents, subscriptions, and purchases. I don't want to create an email alias as those can not be used as primary emails on Apple services.
for example, how do you change JohnAppleseed1@icloud.com to JohnAppleseed2@iCloud.com without losing access to your stuff ?

You can't. You would have to create a new Apple ID to get a new @iCloud.com email address.Apple IDs can't be merged.
