I’d like to update my system software to Mojave. I can download it from the App Store, but it stops on 14mins about 2 mins in and brings up an error. I’ve read that this has happened to a few others. Is there a solution? Can this be resolved?

If you would like to upgrade your system to Mojave why are you trying to install macOS Big Sur.
If you really want upgrade to Big Sur did you check you had enough free space, BS needs 35.5GBs
of free space before it will install.
Is it being down over ethernet or Wifi ? Wifi for 12.18 GB is pushing it but can be done. Disconnect ALL other devices using the Wifi and use the 5 gHz band with direct line-of sight from computer to Router.
Delete any copy of "Install macOS Big Sur" from the Applications folder and try downloading again while in Safe Mode.

You can try while booted in Safe Mode.
