I am a subscriber to Apple TV+. I purchased Verizon phone/service which allows for 1-year free subscription. Will this be added to the current one or override?

Neither. If you're already subscribed to Apple TV+ wether via a previous offer, or by paying for it yourself, you are no longer eligible for the free year offered with the new purchase.

The free offer is only for new users.
