What series of Apple Watch are you using?
It is very likely that your new Apple Watch has come with watchOS 7, which is compatible with Apple Watch Series 3 and later and Apple Watch SE. Upgrading to watchOS 7 requires an iPhone 6s or later running iOS 14 or later.

Your iPhone 6 cannot be upgraded beyond iOS 12 and so is not compatible with your new Apple Watch!
