Your Apple Watch is waterproof for up to 50 meters with no set time limit. Have gone swimming with my watch in a pool for hours and have not experienced any problems, and I have showered with it as well and again no problems. So the recommendation for how deep you can go is 50 meters for however long you need. Note though, Apple still calls it water-resistant.
Note: Apple claims that the "Apple Watch Series 2 and newer have a water resistance rating of 50 meters under ISO standard 22810:2010. Classic Buckle, Leather Loop, Modern Buckle, Milanese, and Link Bracelet Bands aren't water-resistant."
