GPS - Cellular option on Apple Watch SE

I am considering buying the Apple Watch SE with the GPS + Cellular option. My question is:

Does the cellular part work off my iPone’s line? Or do I have to have a separate line for the Apple Watch?

It works off your phone number via a built in Esim in the watch.

GPS (Can I add Cellular?) So I would like to buy the apple watch series 5. I think GPS would be enough for me as I almost always have my phone nearby. I'm wondering if I,at a later date decided I wanted cellular, can that be added to my watch? Thanks for all your help/replies in advance :)
