I have a late 2012 mac mini running OS X 10.10.1.
I want to upgrade to OS X 10.12 because its old hardware and I´m not sure the latest OS X will work properly.
Is it posible to choose the upgrade version or does it allway have to be the latest?
Can i make an image to boot from and go back to OS X 10.10 if the latest version does not work well?

Keep in mind that Apple only provides security updates for the current OS and the two previous versions. Currently macOS 10.13 is still receiving security updates, but this will end very shortly once Apple releases Big Sur which means macOS 10.14 & 10.15 will be the only older versions still receiving security updates.
If you have trouble installing a later version of macOS, then you may first need to upgrade to macOS 10.11 before upgrading to later versions.
I suggest creating a bootable macOS USB installer for which ever OS you decide to install so you have more options if something goes wrong.
I highly recommend making sure to have a good backup before proceeding with the macOS upgrade. FYI, you should always have frequent & regular backups anyway.

The Late 2012 Mac min can run the current version of macOS, Catalina 10.15.7 & any version since 10.8.1. I have two 2012 Mac minis. One running High Sierra, macOS 10.13.6, & the other El Capitan, 10.11.6.
