Here are a few things to make sure before and while downloading iOS 14, or any other iOS:

1. The device must be charged to 50% or more
2. You should be in a place with stable WiFi (for downloading)
3. Always keep a backup, incase things go wrong (like the update fails or something, which is rare!)

So, if it is stuck on estimated time remaining, check your internet stability (If it is available at all times and doesn't disconnect frequently) and just wait!

I had the same problem that it was stuck on estimated time remaining, but I waited and it worked!
