For some reason I can not add the date to the Simple Watch Face though it was there before.
When I select “middle bottom” complication on Simple Watch face, neither the watch or phone will allow me to uncheck “off” to add the date. This is a very useful feature and I’m frustrated that I cannot add it back.

Have you deleted the default calendar from your phone? If so, re-install it and you should get the complications back.
