I am planning to get an Apple Watch series 3 and don’t know if it is compatible with my carrier, dodo mobile. I live in Australia

Here are the carriers that support the apple cellular watch;

And if you watch is non cellular it will work just fine,you just need to have your phone with you when you make a call or send a message.
