I’m interested in my blood oxygen levels during my sleep. But I couldn’t find on the web how they would show with the newly released apple watch.
What will blood oxygen data background measurements look like? Will we see a graph for each night of sleep, of how our oxygen level varied?

The blood oxygen measurements only occur during sleep if you have the "Track Sleep with Apple Watch" setting enabled. Please check out the following link to ensure that your device meets the requirements for that app and its features:

I’d like to know what oxygen data it will show for each night of sleep: would I get anything more detailed than an average oxygen level for the night? if yes, how many measures can I expect?
Yes, a bar graph is visible in the Health app on your iPhone.
It looks similar to the Heart Rate graph
