How do you highlight text in Mac Mail?

I have seen a few posts about setting up highlight in Styles, but the instructions say to type and highlight the text in Pages and then copy to Text Editor. I did that, but the highlight disappears when I copy it to the Editor. Any other suggestions?

Thank you!

If you are using macOS 10.13.6, 10.14.6, or 10.15.6, the Mail compose panel toolbar contains a text foreground, and text background button. Select your text to be highlighted, and click the text background button (adjacent to the Bold button), and select the highlight color.

If you are using an earlier version of the operating system, then there is no toolbar text background button, and there is no reliable way to highlight text, and have that highlighting survive its journey to another mail user.
