From Field On iPhone in Email

When composing a new email using mail in my iphone. The from field is not displayed, I like to know which email address from my many accounts it is coming from. How do I get this field to show up every time?

iPhone SE, iOS 13

In Settings>Mail I have enabled Show To/Cc Label.

When I send an e-mail message, I can see the "To/CC/From" account, and if I tap there and tap on that account, I can change the account to be used.

I need more clarity

Do you not see the From address when you receive an email?
Is it that your friends do to see From address when they receive mails from you?
Do you want to choose the email account in From address while composing?
Which mail app are you using? iOS Mail app or any other.
How many email accounts you have on iOS mail app?

1. Yes, and it does not always show and I'd like it to be persistent. I have 5 email accounts running on my phone.
Which mail app are you using? iOS Mail app or any other.
1. Yes, iOS Mail.
How many email accounts you have on iOS mail app?
1. Oops, answered this one above. I have 5 email accounts.
