My company uses a local third party software compatible with Mojave. Now we're looking for new MacBook 13"and Air 2020 models that's shipped with Catalina.
I wonder if there's a way to downgrade the OS on latest Macs after shipment?

Downgrade is only possible down to the version, that was originally on your mac when it was manufactured.
