I used my Apple ID to log onto my girlfriends old phone because I needed to use it, and now thousand of old photos from that phone are showing up in the photos of my phone.
is there any way to undo this and delete the photos from that phone?

Sign out of iCloud is the way to stop it from continuing to happen. There is no undo.
Her photos have now mixed with yours now, so deletions must be made manually.
