The instructions to QuickTime Player instruct us to use the menu bar to control a recording:
I tried to record what was on my screen. I clicked the "Record" button, and the menu bar disappeared. I had to quit QuickTime Player, and I did not record anything.
How do I get the menu bar to remain open during a recording?

The menu bar is there to set your options before you start a recording. It is not meant to stay on during a recording.
So how do I stop a recording?
The second illustration in the screenshot you posted shows the main Mac menu bar: “Stop screen recording“ points to the Record button with a Stop (square) in its center.
In retrospect, it is obvious. But I had not observed the difference between the application's control panel and the Finder's menu bar.
