I want to delete items that are stored in icloud that are on my desktop. When I try and delete items from the cloud the message tells me its going to delete those items from my desktop. How do I avoid all my documents and pictures from being deleted off my desktop?!

You would need to make an external backup of your data to an external hard drive or thumb drive.
You are syncing with icloud, what you do on one device will reflect on the other.
