I’m trying to delete a games info to start over and can’t. Every time I delete the game it comes back frm we’re i left off.

You likely not only need to delete the game but also any cloud backups. You’ll need to look into the support for your game to see how they back it up. Perhaps they still use Game Center, but they may use their own cloud backup. Years ago Apple started to transition into game developers handling their own backup and friending systems.
