Lately, when taking a picture on the Photo setting, the resulting image is a short video. Any thoughts on why this would happen?

Toggle this button on and off to enable or disable Live Photos. This is a screenshot of the top of the toolbar settings. If the icon is yellow, Live Photos is enabled. In this screenshot, it is turned off.

Because you're using live photos. it takes a short clip of the picture your taking.

You can turn it off in your camera settings.
