Purchased an iPhone 11 Pro yesterday.
Connected my Bluetooth earpiece, however the Bluetooth signal concurrently drops and disconnects.
My previous model - iPhone 7 Plus never had this issue and I had multiple earpiece Bluetooth devices connected.

If your iPhone has been bought yesterday, you should be able to get it replaced under warranty or give it back, to get a new one.
Did the people at the Apple Store or Authorized Apple Service Provider run a diagnostic test?
Can you try another iPhone 11 Pro at your nearest Authorized Apple Service Provider or Apple Store, before you contact Apple Support about diagnosing your device?
Unfortunately that is not possible for the demo models on the floor. The new units are sealed and they are unable to open it unless you purchase it.
