Why My watch can’t connect to my new phone it’s not even being discovered and I don’t have my old phone

You need to remove the watch from your old phone icloud account;
On a computer, go to iCloud.com and sign in with your Apple ID.
Go to Find Iphone.
Select All Devices, then click your Apple Watch.
Click Erase Apple Watch.
Select Next until the device is erased.
Click the remove button next to your Apple Watch.
You will need the apple id that set the watch up on the old phone.
